Several months ago we (I) implemented breakfast for dinner. It started accidentally, at first, when we didn't have anything in the house for a quick dinner aside from eggs...Since then, every Wednesday night is breakfast for dinner night. It is really nice having one night of the week where I, sort of, already have a plan for dinner. Because you know, making breakfast, lunch, and dinner at home seven days a week can get exhausting sometimes, right?
I don't get too extravagant with the breakfasts, they are usually very simple. But, last night I tried something a little different. I made eggs in a muffin tin. I saw this idea months and months ago on pinterest and for some reason I decided to try it last night. And then, before I knew it I was cooking virtually the entire dinner in the oven.
Here's how...
Eggs in a muffin pan...Spray pan with cooking oil. Crack eggs into each cup, scramble the yolk a bit. Sprinkle with salt and pepper and cheese cook for about 20 min. at 350.
Before After Bacon in the oven. Line a cookie sheet with aluminum foil. Place bacon the the foil. Bake in a 400 deg. oven for approximately 15min. Turn halfway through. Cooking time varies depending on the thickness. Asparagus in the oven. Spread on a cookie sheet. Sprinkle with salt and pepper and olive oil. Cook in 400 deg. oven for approximately 10min. Last night I did make pancakes on the stove, but, many many times I have made this Dutch Baby and it is so yummy!!
We rounded it all out with some cherry tomatoes and avocado, yum!
And the best part...there were dinner leftovers for breakfast!! HA HA!
