Two weekends ago we headed down the road to go blackberry and peach picking...
Violet and Henry have been talking about doing this for such a long time. They have such great memories of the last time we went. They also have great memories of the yummy ice cream and pie that were made as a result!
We had an extra person picking with us this year because Daddy got to come too. The peaches were more ripe when we went this year than they were last year. We came home with lots and lots of berries and peaches!
And so there has been a lot of pie and ice that's been made, and eaten!
The kids eagerly helped me to make some yummy treats from our hall. We made the same blackberry pie and blackberry ice cream that we did last year (see recipes/links here). Violet raves about that blackberry pie all the time! It is definitely her favorite!
The peach, blackberry pie is an adaptation of a family peach pie recipe. And the peach ice cream, which has been declared my best batch of ice cream yet, is an adaptation of the
Ben and Jerry's Peach Ice cream:
1 cup sugar
2 large eggs
2 cups heavy cream or 2 cups whipping cream
1 cup milk
Directions:
Combine the peaches, 1/2 cup of the sugar, and the lemon juice in a bowl.
Cover and refrigerate for 2 hours, stirring the mixture every 30 minutes.
Remove the peaches from the refrigerator and drain the juice into another bowl.
Return the peaches to the refrigerator. Whisk the eggs in a mixing bowl until light and fluffy, 1-2 minutes.
Mix remaining 1/2 cup sugar and 1/4 brown sugar together. Whisk into the eggs, a little at a time, then continue whisking until completely blended, about 1 minute more.
Pour in the cream and milk and whisk to blend.
Add the peach juice and blend.
Transfer the mixture to an ice cream maker and freeze following manufacturer's instructions.
After the ice cream stiffens (about 2 minutes before if is done) add the peaches, then continue freezing until the ice cream is ready.
Makes 1 quart.
